LIBBY'S® Famous Pumpkin Pie

Ingredients

* 3/4 cup granulated sugar
* 1 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cloves
* 2 large eggs
* 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
* 1 can (12 fl. oz.) NESTLÉ® CARNATION® Fat Free Evaporated Milk
* 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
* Whipped cream (optional)

Notes

* I used Marie Callender's Deep Dish Pie Shell and there was extra filling

Tips

* Place pie shell on cookie sheet on oven rack before pouring filling

Oreo Cheesecake

1 1/4 c. graham cracker crumbs
3-4 tbsp. melted butter
1.5 c. whipping cream, divided
3 (8 oz.) pkg. cream cheese, softened
1 c. white sugar
30 Oreo cookies divided

Crust: Combine crumbs and melted butter; press into 9-inch springform pan. Place crust in the freezer.

Whip 1 1/2 cups whipping cream until stiff peaks form. Refrigerate until ready to use. With an electric beater, whip cream cheese until smooth. Add sugar and blend. Coarsely chop 24 cookies and fold into cream cheese mixture. Fold in whipping cream. Turn filling into crust. Cover and refrigerate 4 hours. Garnish with Oreo cookies.

The Chop is just a bit too big.
